Stacked Enchiladas


My college roommates may have a feel a wave of nostalgia when they see this picture. Mostly because it was the only thing I knew how to make. So on the rare occasion that I made dinner, this was the masterpiece they got to partake of (if I didn't hog it all to myself that is - I know it's a lot of sour cream, don't judge me).

This just in:  Apparently Ann Arbor's own Kathy Diehl is responsible for tthe blessing of these enchiladas in my life, so a shout out to the RS prez.  

Ingredients:
6 Corn tortillas
2 1/2 cups grated cheddar cheese
1 (10 oz) can of red enchilada sauce (I use Old El Paso medium)
2 cups cooked chicken pieces
1 cup sour cream
1/4 c chopped green onions
1 tsp. cumin

Instructions:
Combine sour cream and cumin. Add chicken and green onions and set aside. Dip 1 tortilla into enchilada sauce - don't drain excess. Place tortilla in round casserole dish. Top with 1/6 of the chicken mixture, then sprinkle with 1/3 cup of cheese. Repeat layers. Before adding last cheese, pour any remaining enchilada sauce over all. Top with cheese. Bake at 350 for 40 minutes.

How cool - if you're in Ann Arbor you only live about 45 minutes away from me. I'm living in the Downriver area of Detroit. :) That's a fun connection. :)

I made this for dinner tonight and we LOVED it! Thank you. The only down side was there was barely enough leftovers to bring to work for lunch tomorrow.

Erin, what a coincidence! My husband works in Detroit, so he's there all the time.

and Kristin, I will shamefully admit to sometimes eating the leftover enchiladas for breakfast the next morning. I know, sick. But not really. They're that good.

Made these for dinner tonight and they were totally amazing. I have to admit, I was doubtful... all the ingredients seem so normal and nothing special, but MAN these are definitely going in our book of favorites. So delicious!

Kristin, what size of corn tortilla do you use? I used the small size and I didn't have a casserole dish that was the right size. Since this is going to be a regular menu item around here I want to have a casserole dish that fits it. Ok, writing about this is making me hungry...I already brushed my teeth but...

I use the small corn tortillas. Invest in the dish, it will be well worth it :)

Are the small tortillas 6 inches? This looks very yummy but I don't think I have a round casserole dish small enough.

Yes, 6 inches. Another idea is to double the recipe and do two stacks side by side (it's okay if they overlap a little) in a large casserole dish.

I tried this last night and it was very yummy. I doubled the recipe and put it in a 9x13 casserole dish. We only had about two servings left when we were done with dinner. I think this will be a new favorite at our house. It is so easy! Thanks!

I want to make this this weekend! I'm assuming you use GREEN enchilada sauce. I'm glad to read others have doubled it and used it in a 9 X 13, because that is what I had planned. I'm excited!

Michelle - Actually, I use red enchilada sauce. But sometimes I use green and I switch the cheese to monterey jack instead of cheddar.

Have you ever tried this with ground beef? When making my menu for the week, I forgot this was chicken. Any ideas?

I have never used ground beef and have to say I'm a little doubtful. That said, if you try it, let me know how it turns out!
