Melinda's Spinach Salad


From the lovely Melinda Cameron.  My mom and Melinda have been friends since college, maybe just so that one day I would get the recipe for this salad.

Ingredients
1 large bag baby spinach
1 bag shredded carrots
1 bag shredded cheddar cheese

1/2 stick butter
1-2 oz sesame seed
1 bag sliced almonds
Oriental flavor Ramen Noodles

Sweet Vidalia Onion Dressing

Instructions
Saute butter, sesame seeds, almonds, Ramen Noodle and seasoning packet until brown.  Cool.  Mix bag of spinach, carrots and cheese.  Add sauteed topping, then toss with dressing.

I made this tonight and it was SO GOOD! Along with the California Chicken marinade which was also yummy. I tossed the salad before serving with the salad dressing, which I don't know if that is how you serve it. Also I have an Asian chicken salad recipe that also calls for sesame seeds, almonds, and ramen, but you toast it on a baking sheet under the broiler for like 5 minutes. So I did that and I thought it tasted really good, although I am perfectly willing to see how if you saute it in a stick of butter, you might not be able to go back, but I thought it was a good way to lighten the recipe up.
